Salts from the Sečovlje and Strunjan salt-pans
At the Sečovlje and Strunjan salt-pans different types of salt are harvested: the so-called first salt, traditional salt, and Piran salt. They differ from each other in the period of their gathering, concentration of brine during crystallization, and thus in NaCl and other minerals content.
The flower of salt is formed on the surface of brine from salt crystals, which constitute the characteristic upside-down turned pyramidal structure in the shape of a thin, fragile crust. The flower of salt can crystallize in the entire crystallization area of salt, although the best flower of salt grows during the higher concentration of brine. Its colouration is white to slightly pink. The tinier the flower of salt's crystals, the higher its quality. From other salts it differs in its hollowness and lightness. It can be easily crushed between fingers.
